How We Paid Off Our Debt With Coupons


Success!
I hate to admit defeat, but I have to say that our day-to-day expenses got away from us for awhile. We fell several months behind on all our payments, due to temporary unemployment, and playing catch up has taken awhile.

One of the things that helped was using coupons. I know it sounds funny, but when you look at the numbers, it makes sense:

 Our average grocery costs for 1 week, for 4 people, used to be $250.00! Ever since I have been using price matches and coupons, I have never spent more than $100 per week! That is an average savings of $150.00 per week, and a grand total of $7,800.00 saved in 1 year!

We have, as of this month, caught up on our payments. It feels so good to be out from underneath that pressure! I can answer my phone or door without fear of it being a bill collector or landlord! J This is largely due to the $3,300 we saved in 6 months from using the coupons, as well as some super sweet deals like the $50 ING Bonus.

My next goal is to use this newfound coupon power to pay off some of our secondary debt (medical bills and other issues) to fix our credit. 
[Not that we have lousy credit on our own, but we both have the kind of parents who ran up our credit then surprised us with it when we became adults.]

 Maybe someday we will be able to afford our own home, but for now we are making every cent count and working towards a bright new future! I never set out to be an extreme couponer (and I really don’t think I am all that extreme) but I must say, it feels Darn Good to have those bills paid off, and all thanks to using coupons! 

My Tips:
1. Make a plan and a budget ~ then stick to them. Strictly. No matter what. 

3. Only buy what you need, and only when you have a coupon. The whole stockpile thing can wait until you are out from under your debt. 

3. Take the money you would have spent and stick it in a savings account. Then you are truly saving the money! Use it to pay your bills. Only your bills.

4. As a family, decide what you can give up to save some money. We do not have cable T.V. or a land-line phone. This helped with with our debt, too. 
Once we have paid off our secondary debt, we may decide to get cable again...but more than likely, we will want to use that money to save up a down payment for a home. We have to decide what is a better investment with your money...entertainment now, or a home later?

My vote is on home. I barely even miss having cable.

Easy Mini Crescent Roll Quiches


I've done a post about quiche before...it is one of my favorite meals, and it reminds me of my childhood, standing in the kitchen cooking with my dad. We are very French, so it feels good to share this meal with my family, in any form! You can make these babies ahead of time and freeze them, they will keep in a Tupperware or a Ziploc baggie for about 3 months. IF they last that long! 


Ingredients:
10 slices bacon
1 8-ounce package cream cheese, softened

1 cup shredded cheddar cheese
2 tablespoons milk
3 eggs
2 tablespoon dried flaked onion
1 Tbsp  Roasted Garlic & Bell Pepper Seasoning  by McCormick (One of my personal favs!)
1 sprinkle of salt, pepper (to taste)
2 cans Pillsbury refrigerated crescent rolls 


Directions:

1. Heat oven to 375 degrees (F). Lightly grease muffin cups. (I used a spritz of Pam.)

2. Cook bacon over medium high heat until crisp and evenly brown. Drain, crumble, and set aside.

3. Beat the cream cheese, milk, and eggs in a medium bowl until smooth, with an electric mixer on low. Stir in cheddar cheese, onion, garlic, and seasoning, and set aside.

4. Separate each crescent triangle. Press each one into the bottom and sides of each muffin cup. Sprinkle bacon evenly into the bottoms of the dough-lined muffin cups. Spoon cheese-egg mixture into each cup, but do not overfill. I would say just leave a little from the brim, to allow for the egg to puff up.

5. Sprinkle reserved bacon and a little shredded cheese on top of each, if you like.

6. Bake 10-15 minutes, until filling is set and rims of the quiches are golden brown. If you tap a quiche and it bounces just a little under your finger, it is perfectly cooked.

Makes 24 mini quiches.

FREE Customizable Printable Chore Checklists

Delegation is an important part to running any household, regardless of who you have in it! But when giving out chores, it is so tempting to take it all on alone, because we know if we want it done right, just do it ourselves!

I decided to not my family get away with this any more! I made up chore check lists for each room, complete with a little check box next to each task. Now, when I say "Clean the bathroom"...there are no excuses for why the floor didn't get washed or the trash wasn't taken out!


You can print your own version of these bad boys out and laminate them, like I am going to...or print a new one out each time you need to hand out the chores! I plan to put mine on a hook on the fridge, so when it is time to do housework, it is near the cleaners and broom that I will be handing out... ;)

Buggy (or Butterfly) Snack Bags!

I've seen a few different takes on these but we just had to make our own, for the first Back-To-School "Snack Healthy" day (I signed up as one of the classroom mommies this year! My first time feeling with-it enough to go to the school and help out, lol). Lil' G and I made up a batch for the kids in her class, and a few extras for ourselves!

The magnets on the back are an addition of mine...I love cute for cuteness sake, but when you are not using these adorable buggies as a bag clip they double as a practical magnet for the fridge! PLUS, you won't lose them in the fray.

Materials:
wood clothespins (I got a bag of 50 at Dollar General for $2)
Ziploc sandwich size baggies (Use coupons!)
googly eyes (optional-you can draw them on)
fuzzy craft pipe cleaners ($1 Dollar General)
markers or paint (we used markers)
magnets (optional but I LOVE IT) - ($1 for a pack of 50 at Hobby Lobby)

1.  Decorate your bug bodies with markers. Curl the 'antennae' around a pencil or use your fingers. Then slip it up in between the clip. Add eyes (and magnets) with glue, if you wish, and let everything dry.

2. Fill your snack bags! I like doubling the grapes with Goldfish crackers, and the bug clip keeps them separate! Gather the center of the bag between your thumb and forfingers, and add the snacks to either side (held separate by your hand) then put your bug clip in the center, to hold the two sides apart.

3. Get kudos from the other moms, for being clever and crafty!

Superhero Cork Coasters

I used 1/4 inch cork and made a trio of SUPER coasters for my super friend, Mike. 


Each coaster measures 4 inches by 3 1/2 inches.
I made a custom stencil for the shield (you can read how to do that here). 
I used a sponge brush to dab the paint onto the coasters. 
Each coaster got several coats of clear acrylic seal, for water repelling.

Dry Rub Ratio How-To & Recipe


How to Make your Own Dry Rub Recipe


You want fresh spices and herbs. Buy the freshest you can find! Or use dried herbs from your garden. There is a huge difference between the buck-a-bottle spices and the fresh stuff when it comes to flavor... and hey, it's your reputation! Use an electric spice grinder or a mortar and pestle to grind your herbs.

You can use this ratio of ingredients, at first anyway. Play with it and use what fits your tastes.
You then add spices at a ratio known as the 8:3:1:1 rub. It works! Like this:

* 8 tablespoons light brown sugar tightly packed
* 3 tablespoons kosher salt
* 1 tablespoon chili powder
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon thyme (crushed)
* 1/2 teaspoon onion powder

and so on...
Regardless of the spices you choose to use, just stick to this ratio and you should be gold.

You should use dark sugars like sugar-in-the-raw, or high quality brown sugar. Kosher salt is also preferred for the best dry rub recipes.

No 'low and slow' BBQ is complete without a fantastic dry rub!
This is my pork and beef dry rub BBQ recipe. It has a little kick and a little sweetness, and a whole lotta flavor! 



Ingredients:
8 tablespoons light brown sugar
3 tablespoons kosher salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cracked black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon thyme (crushed)
1/2 teaspoon coriander

1. Mix your spices well. I do this by putting them into a recycled glass herb jar and shaking the heck out of it. 

2. Apply liberally to a thawed, moist cut of meat. I think you get the best flavor from doing this 24 hours before letting the meat touch the grill, but try to do it a minimum of 2 hours beforehand. 

3. Wrap the meat in plastic wrap and put it back into the refrigerator. Pull out our meat of choice about an hour prior to cooking (room temperature). No point in wasting fuel! :)
